Sorry about the delay, I just saw your post..posted more than a month ago.
I never went on Grand Northern but I have gone to the Canada-The Rockies tour last year, where having Canadian dollars helped a lot (and I’m originally from Southern California.)
Since the Grand Northern does not really get you up in Canada for a long while, you probably do not want to have a lot of Canadian dollars in your wallet. The tour covers the expanse of the northern USA…so having USD helps. I still would recommend traveler’s checks if there are places that accept them.
